meat & ayam

haha... tetiba teringat ape yg Dr.Snigdha ajar kat kelas food science and nutrition die last thursday... there's some part that i found very intresting and wanna share with u guys...

pernah x korang menghadapi masalah melembutkan daging yg telah disimpan terlalu lama di dlm ice box korang? tahu x papaya n pineapple boleh mlembutkn daging ini smula....

that's really true... it's fact not auorta!

papaya ade proteolytic enzyme yg dinamakn PAPAIN n pineapple plak ade enzyme yg dinamakan BROMELAIN....

so both of these enzyme should be rubbed into the fresh meat atau ditaburkan in the form of powder or solution....
OR before slaughter, u can inject that enzyme into the vein of animal...

ape yg akan berlaku sebenarnye, protein fibres yg ade kat meat tu akan di hydrolysed and thereby improving the tenderness of the meat...

in my house, my dad n my younger sister always argued about drumstick kanan n drumstick kiri... masing2 cuba menagakkan kebenaran yg belum tentu benarnya.... masing2 akan berkata, "papa dpt kanan" adikku plak akan blas "x la ira punya yg kanan"... pelik2...

tp untuk pengetahuan anda semua... drumstick kanan is tasteless compare to drumstick kiri... *nampaknya mreka berdua telah melakukan kesilapan dlm hidup*

KENAPE? ayam ade flexible breastbone cartilage, so bila die jln... die x straight je ke depan... bdn die mesti akan tergedik ke kiri dan kanan... n most of the chicken have high tendency unt lebih menjunam ke kanan dari ke kiri...

JADI ia akan menyebabkan muscle2 di drumstick kanan menjadi lebih keras dr kiri... ia menjadi lebih liat dr kiri and it's palatability will decrease....

CONCLUSIONnya, if u go to supermarket after this, try to select n buy "right side drumstick"... tp bleh beza ke? pandai2 koranglah!

hahaha...post nih xleh blah....camner ek nak pilih drumstik kanan ke kiri...hor2...kalo kepak bleh lagi, tp kalo drumstik...hmm, maybe tengok potongan dier katner kot.
